One of the world’s best chefs is about to make his debut in the United Kingdom.
Mauro Colagreco, the man behind the Michelin three-star Mirazur in France, is launching three restaurants at the brand-new Raffles London, which opens its doors on Friday. The new spots include the signature restaurant Mauro Colagreco, the private-dining Mauro’s Table, and the all-day eatery Saison.
“The incredible location, combined with the professionalism of the Raffles London team, convinced me that this was the ideal time and place to launch for the first time in London with concepts that will be tailor-made for Raffles,” Colagreco said in a statement.

At all three establishments, Colagreco is focusing on local produce and ingredients that shine a light on the U.K.’s terroir. To that end, the restaurants are sourcing from local farms, fields, and shores, and dishes will evolve to feature seasonal stars.
At Mauro Colagreco (the restaurant), the chef will present a menu that shows off his work in the sustainable-gastronomy movement, with a particular emphasis on fruits and vegetables. Mauro’s Table, meanwhile, will be a more intimate experience with space for just 20 guests. Via a show kitchen, diners will be able to watch chefs prepare the tasting menu, inspired by a knotted garden, which is believed to always contain something green, in flower, or eatable. And Saison will serve as a more traditional hotel restaurant, with seasonal Mediterranean cuisine offered at breakfast, brunch, lunch, dinner, and afternoon tea (this is London, after all).

The new Raffles hotel will comprise 120 rooms and suites designed by Thierry Despont, as well as 85 private residences designed by 1508 London. Along with Colagreco’s three restaurants, there will be another six eateries plus three bars. A wellness and member’s health club was created alongside Guerlain and the movement specialists Pillar, and the hotel will notably have a 20-meter (66-foot) swimming pool for guests to take a dip. The entire project is housed within the OWO, or Old War Office (Saison will be in a former historic library at the property).
While a stay at Raffles London sounds just divine, it’s Colagreco’s first foray into the U.K. that we’re most excited about.
